The Peat Inn, St. Andrews – 4 Star

The Peat Inn is around 15 minutes’ drive from St Andrews and East Neuk’s historic and picturesque fishing villages. It’s a peaceful place to unwind; the suites overlooking an inviting garden. Relax with a drink or tea under the trees and play spot the alpaca amongst the vociferous sheep in a neighbouring field – happily they keep the same hours as the guests.

Accomodations :

Seven split-level suites (with an additional suite all on one level) are places of serenity and comfort without trend-chasing. Soothing colours and garden views downstairs give the bed and bathroom (soft grey tiles, drench showers over deep baths) a light and peaceful feel, while upstairs the living area comes with a smart tweed sofa, dining table and chairs. The Nespresso machine and a refrigerator with bottled water and fresh milk are as expected; a decanter of sherry and plate of delicious chocolate brownies a bonus. Just don’t expect a gigantic television screen – who needs it when you’re going to spend most of your evening eating?

Dining :

There is a reason why Geoffrey Smeddle has retained the Michelin star at the restaurant since 2010. Whether having lunch or dinner (three or four courses à la carte or the six-course tasting menu), you’ll find seasonal and local touchstones of classic Scottish cooking (even the honey is made by local bees) elevated to goosebump-making heights of flavour, generosity (the “extras” are a delight) and skill.

An apparently simple dish of beetroot and goat’s cheese with the addition of smoked apple jelly, beetroot mousse, sunflower seed and truffle provides startling freshness and intensity, while wild halibut with sea herbs, razor clams, fresh pea velouté and summer beans is so light and bright yet complex it demands a moment of silent appreciation. And as for the post-dessert element of an ethereally delicate sweet/salty wafer delivered in a box of fresh rosemary? It knocks Proust and his madeleines right out of the park.

For breakfast in your suite, you’re given a list of deliciously upmarket continental breakfast elements to tick and what time you want it. Think poached seasonal fruit, luxurious homemade granola, a selection of cheeses and honey – both local. In the morning it comes to your room at the appointed time, served with quiet elegance and attention to detail.
